Papua New Guinea grows coffee at altitude on smallholder farms, and the highlands produce cups known for smooth body and low bitterness — a natural fit for a coffee that carries creamer and maple sugar in the same spoonful.
Our beans are certified organic and fair trade: the growers are paid fairly, and the certification is audited rather than implied. If we're going to print every milligram of mushroom on the label, the coffee should meet the same standard of honesty.
Freeze-dried, not spray-dried.
Most instant coffee is spray-dried: blasted with hot air, which is fast, cheap, and hard on flavour. Ours is freeze-dried — brewed coffee is frozen and the water removed under vacuum at low temperature, preserving far more of the original cup.
